Forcing Violets Indoors

This is our beautiful Easter cake. I used my favorite orange cake recipe, and sprinkled fresh little violets on top. (Did you know that violets are edible?)

A few weeks ago I noticed these tiny violet leaves beginning to unfurl in my garden. (I knew where to look for them.) I dug them up.

This is what the roots of the violet look like. There is a knot of thick roots at the base of the plant.....are they called tubers?

I planted the violets in a little pot with garden soil and put them in a sunny window in the kitchen.

Soon the leaves began to stretch and open.

Last week the violets bloomed.

On Easter I scattered them on our cake.

Violets in a Pot

Yesterday I dug up some sweet violet roots to plant in a pot inside. Right now, the violets are sleeping in the mud, but in a few weeks, we will have violets to decorate our Easter cake. Read about it here:

I haven't been on Acorn Pies much recently because I have been having problems with blogger. But I'm back! Come back soon to see the finished crazy quilt, (yes, it's done!) a post about stripy hand knit hats, and a visit to a horse barn and an Amish farmer's market. See you soon! love, Beth
