Fresh Apple Cake





Fresh Apple Cake

2 eggs
1 cup light brown sugar
1 cup sugar
1/2 cup butter
3/4 cup olive oil
3 cups of flour
1/2 teaspoon salt

1 teaspoon baking soda
1 teaspoon cinnamon
2 teaspoons vanilla
3 cups apples, peeled and diced
1 cup nuts, chopped (optional)

Preheat oven to 350 degrees. Beat butter.  Add sugar and beat until creamy.  Add eggs one at a time, then add oil. Beat this mixture 3 minutes and add dry, sifted ingredients. Mix well. Add apples, nuts, and vanilla. Grease and flour tube or bundt pan and add batter. Bake for 1 hour.

I use olive oil, but for a milder taste, use vegetable oil.

Serves 12 to 15.

I adapted this recipe from Savannah Style, a cookbook of the Junior League of Savannah.

My apologies friends...this recipe had some typos. I have corrected them. There IS flour in this cake and there are not 3 cups of vanilla!! Beth

Hi, Appleshoe! I lived through no wheat days with my youngest when he was a baby! It's hard! Do you know the Gluten Free Baker book? Beth
