
This is our beautiful Easter cake. I used my favorite orange cake recipe, and sprinkled fresh little violets on top. (Did you know that violets are edible?)

A few weeks ago I noticed these tiny violet leaves beginning to unfurl in my garden. (I knew where to look for them.) I dug them up.

This is what the roots of the violet look like. There is a knot of thick roots at the base of the plant.....are they called tubers?

I planted the violets in a little pot with garden soil and put them in a sunny window in the kitchen.

Soon the leaves began to stretch and open.

Last week the violets bloomed.

On Easter I scattered them on our cake.

So smart!! I'd made a plain-looking cake for Easter, and was wishing for some violets to put on it; the first one didn't open until the day after Easter. I'll have to remember this for next year!

Lest you think I am totally together in a Martha Stewarty kind of way, you should know I forced the violets just for fun. (I'm going to try to do it in the winter next year.) They bloomed in time for Easter, and since we love to decorate cakes with violets and johnny-jump-ups, getting to use them for our Easter cake was just plain serendipity. much love, Beth
Our yard is covered in violets right now (gotta love Florida). I've been anxiously awaiting the dandelions, but we seem to only have a dwarf/midget variety.

We had so many wild violets at our last home that we would harvest and I am searching for them here and have not found any yet : ( fingers crossed!

Simple and beautiful! I did know that violets were edible, but I have never tried eating them. I love the idea of scattering them over an Easter cake--how very "springlike" and special!
